When it’s the strawberry season, and we have so many fresh, ripe and sweet strawberries, it’s the best time to make this strawberry puree recipe.

So let me share our simple no-cooking-required strawberry sauce recipe.

What’s Strawberry Puree?

Strawberry puree is a smooth runny fruit puree used to top up dessert, pancakes, or flavor drinks. It’s made from fresh or frozen strawberries pulsed with a touch of sweetener.

It’s very similar to strawberry sauce or strawberry coulis, except it’s a no-cook recipe, lower in sugar and less thick.

How To Make Strawberry Puree

Strawberry puree, like mango puree, is one of the easiest fruit puree recipes ever! They don’t require cooking, and they can be made in less than 5 minutes in the bowl of your food processor or high-speed blender.

Ingredients

All you need to make this strawberry puree delicious are:

  • Fresh or frozen strawberries – wash the fresh strawberries under cold tap water, then hull them with a sharp knife. If you use frozen strawberries, thaw them before using them in the recipe.
  • Liquid sweetener of choice – you can totally skip the sweetener if you are using this strawberry puree for babies. We love to use a touch of maple syrup or agave syrup, or coconut nectar to boost the sweet flavor of this strawberry puree for kids.
  • Lime juice or lemon juice – this helps preserve the vibrant red color of the puree and also balances the sweetness of the ripe strawberries.

Preparing The Fruits

Since this is a recipe with only three ingredients, its flavor and taste mostly depend on the type and ripeness of your strawberries.

Always choose ripe strawberries for the best sweet flavor. This also allows you to decrease sweetener and make the puree even healthier!

Then, wash the strawberries with their steam on it prevents losing flavors from the fruits.

Then, hull strawberries on a chopping board using a sharp knife.

Place the strawberries, whole or diced, in the bowl of the food processor and add the remaining ingredients.

  • 1/4 teaspoon of vanilla extract
  • 1/4 teaspoon of natural strawberry extract to boost strawberry flavor naturally
  • More sweetener
  • Fresh mint

Blend again for 20 seconds at high speed after each addition you made.

Refrigerate one hour to give some time to the puree to enhance its flavor, or serve immediately for a quick snack.

You can store the strawberry puree in the fridge for up to 3 days if placed in a sealed glass mason jar.

Another option is to freeze the puree in a small ice cube tray and use it in smoothies!

Sure, you can use frozen strawberries as long as you thaw the frozen strawberries before adding them to the blender. Don’t blend the frozen strawberries, or it will result in a strawberry granite and not a pure.

Can I skip the sweetener for babies?

Absolutely, and you can also use less lime juice if too sour for your little one.

Can I add other fruits?

All fresh berries can be pureed without pre-cooking, including blueberries and raspberries. You can add a combination of these fruits to the blender.

My puree is too grainy, what can I do?

If you love your puree ultra-smooth, place the puree over a fine mesh or fine sieve to remove the pulp and only keep the strawberry juice.

My puree is too runny, can I save it?

Strawberry puree thickens after a few hours in the fridge.

If it’s too runny to your liking, pour the puree in a saucepan and cook for 5 minutes over medium heat to reduce the strawberry puree, evaporate the extra liquid and thicken.
