Baby Cereal Muffins – 1 1/4 cup All-purpose Flour – 1/2 cup Baby Infant Cereals – 1 tsp Baking Powder – 1/4 tsp Baking Soda – 1 cup Mashed Ripe Bananas – 2 tbsp Melted Coconut Oil – 3/4 cup Milk of Choice – 1 large Egg
Mash the Bananas in a mixing bowl. Add the wet Muffin ingredients and whisk.
Stir in the flour, baby cereals, baking powder, and baking soda with a silicone spatula.
Form a thick and consistent muffin batter. Prepare two 12-hole mini-muffin pans.
Fill the two 12-hole mini muffin trays with the Baby Cereal Muffin batter.
Cook the Baby Muffins with Iron-fortified Infant Cereals for 25 minutes at 350°F.
