Baby Waffles – Unsweetened Almond Milk – Olive Oil – Ripe Banana – White Wholewheat Flour – Quick Cooking Oats – Baking Powder – Grated Zucchini - Blueberries
These Baby Waffles are a fantastic way of getting your little ones to try and love new healthy fruits and vegetables with a portion of banana, blueberries, and zucchini in each waffle.

Prepare the bananas by peeling and mashing them with a fork. Grate the zucchini with a hand grater or food processor. Then, measure the amount needed by the baby waffle recipe.

Combine the mashed bananas with the almond milk and olive oil in a large mixing bowl. Stir the liquid baby waffle ingredients with a hand whisk until well combined.

Add the wholewheat flour, quick oats, and baking powder to the bowl and add the grated zucchini after they have been thoroughly drained. Mix the batter with a silicone spatula.

Add the fresh blueberries to the baby waffle batter at that point, but don't overmix them, or they will break apart. Warm a mini waffle maker and spray some high-smoke point oil on it.

Add 2 to 3 tablespoons of Baby Waffle batter to the hot Waffle Maker iron and cook them for about 3 minutes. Repeat until you have used the whole batter - it should make 10 mini waffles.

Enjoy your Baby Waffles on their own, or decorate them with fresh blueberries or strawberries, a drizzle of peanut butter, or a hint of maple syrup for a delicious, simple breakfast.
