Oatmeal Banana Bread – All-purpose Flour – Rolled Oats – Baking Powder – Baking Soda – Cinnamon – Salt – Mashed Ripe Bananas – Maple Syrup or honey – Eggs or Flax eggs – Melted Coconut Oil – Vanilla

Pick ripe bananas, preferably with dark spots on their skin for the perfect sweetness. Mash the bananas with a potato masher and measure the quantity needed.

Combine the mashed bananas with the other liquid ingredients: coconut oil, beaten eggs, vanilla, and maple syrup in the bowl of your stand mixer.

Use the paddle attachment of your stand mixer to combine the wet oatmeal banana bread ingredients until well combined.

Combine in another bowl all the dry oatmeal banana bread ingredients: flour, rolled oats, baking powder, baking soda, cinnamon, and salt.

Pour the combined dry ingredients into the wet ingredients. Stir until a thick, consistent oatmeal banana bread batter forms.
