Quinoa Balls (Vegan)

INGREDIENTS

Quinoa Balls  – 1 cup Cooked Quinoa – 1 large Sweet Potato – 1 cup Panko Crumb – 2 tbsp Nutritional Yeast – 1/4 tsp Garlic Powder – 1/4 tsp Salt – 1/4 tsp Ground Paprika – 1/4 tsp Ground Cumin

Peal and cut the Sweet Potatoes into small cubes. Place them in a small saucepan with water and boil them.

When the Sweet Potatoes are fork-tender, drain them in a sieve and mash them with a potato masher.

Combine the mashed sweet potatoes, with all the other quinoa ball ingredients in a mixing bowl.

Stir the Quinoa Ball mixture with a spatula and squeeze it with your hands to combine evenly.

Form Quinoa Balls by measuring 1 tablespoon of batter and rolling it in your oiled hands.

Place all the Quinoa Balls on a baking sheet lined with parchment paper and bake them for 20 minutes at 400°F.

Or cook them in an air fryer for 15 minutes at 400°F (200°C), shaking the basket halfway through cooking.

Enjoy your Quinoa Balls with Tomato Sauce, Mustard, Aioli, Yogurt Dip, or a Cucumber Dip.
