INGREDIENTS

Spinach Chocolate Chip Muffins – Rolled Oats – Mashed Bananas – Milk of Choice – Melted Butter – Maple Syrup – Baby Spinach Leaves – Vanilla Extract – Baking Powder – Baking Soda – Dark Chocolate Chips

Combine the Spinach Chocolate Chips Muffins ingredients in the jug of a blender: spinach, bananas, milk, butter, maple syrup, vanilla, baking powder, and baking soda.

Before blending the Spinach Chocolate Chips Muffin Batter, add the rolled oats then blend for 45 to 60 seconds until the batter is smooth.

Stop the blender and incorporate the sugar-free chocolate chips with a silicone spatula - do not blend again with the chocolate chips.

Line a muffin tin with lightly oiled muffin cups and pour the spinach chocolate chip muffin batters. Bake the muffins for 20 minutes at 350°F (180°C).

Let the Spinach Chocolate Chip Muffins cool down for 1 hour on a cooling rack before eating as the batter remains sticky until dry.
