Sweet Potato Oatmeal Cookies – Mashed Sweet Potato Puree – Quick Oats – Maple Syrup
Peel and trim the orange sweet potatoes before cooking them in boiling water for 10 to 15 minutes and mashing them into a rough sweet potato puree with a masher.
Measure the amount of sweet potato needed and transfer it to a mixing bowl before adding the maple syrup and combining the wet batter with a silicone spatula.
Add the quick oats to the Sweet Potato Oatmeal Cookies batter and combine it with the silicone spatula until it's smooth, sticky, and quite thick.
When the batter is ready, form 10 Sweet Potato Oatmeal Cookies and place them on a cookie sheet lined with parchment paper before baking them at 350°F (180°C) for 15-20 minutes.
