Ingredients

  • 6 slices Ciabatta Bread hard, a few days old, thick-cut to 3/4"
  • 2 large Egg
  • ¼ cup Milk you can use dairy-free milk, like almond milk , soy milk, or coconut milk
  • 1 teaspoon Sugar
  • ¼ teaspoon Cinnamon
  • ¼ teaspoon Vanilla

For frying

  • 3 teaspoons Coconut Oil or butter

Instructions

  • Cut your ciabatta bread loaf or mini ciabatta rolls into thick slices of about 3/4 inches to 1 inch.
  • If your bread is fresh and not firm, bake the slices of ciabatta bread at 350°F (180°C) for 10 minutes on a baking sheet. Flip halfway and cool down on a wire rack before using in the recipe.
  • In a shallow bowl, whisk egg, cinnamon, sugar, milk, and vanilla extract.
  • Dip each side of the bread slices for a few seconds into the egg mixture. Wait for a few seconds above the bowl to let the excess egg run back to the bowl. Place the prepared bread slices onto a plate.
  • Warm the coconut oil or butter in a frying pan. When hot, fry bread slices for 2-3 minutes on one side, then flip on the other side. Add more coconut oil if no more is left in the pan. Repeat these steps until all the French toasts are cooked.
  • Serve immediately with a drizzle of maple syrup and fresh berries.
