Peel and mash the bananas before measuring the amount required and stirring it in a mixing bowl with the melted butter, lemon juice, and apple sauce with a silicone spatula.
Pour the all-purpose flour, quick-cooking oats, baking powder, and baking soda into the ABC Muffins batter and combine it until it has become smooth and sticky.
Peel and grate fresh carrots with a food processor before measuring them and transferring them to the Apple Banana Carrot Muffin batter, then combine it with a spatula.
Use a small measuring spoon to scoop out the ABC Muffin batter and transfer each to a mini-muffin pan lightly oiled with coconut oil, or lined with minimuffin cases.
Take the mini muffin pans to an oven preheated to 350°F (180°C) and bake them for 15 to 18 minutes, until golden-brown on the top and a skewer inserted in the middle comes out clean.
Move the ABC Muffins to a cooling rack to cool down immediately after baking, without any cool down in the pan or they would dry out too fast due to their small size.
